Potatoes are Showing Sprouts – But When Should They Be Hilled?

They survived last weekend's cold snap! The first sprouts have officially emerged, which is a great sign that the tubers are happy, healthy, and finding their footing in the bags.

Since moving the potatoes to their outdoor grow bags, I’ve been using a tarp regularly to cover them overnight. With evening lows dipping into the high 30s and low 40s recently, the extra protection was a necessity—and so far, it’s paid off.

As far as hilling goes, we'll need to wait a bit. Seeing green is an encouraging first sign, but we'll want to see about 6–8 inches of sturdy foliage before hilling them with soil.
