Too Many Seeds! Vacuum Sealing My 2026 Garden Surplus in St. Paul, MN

So this year, I went a little overboard on seed packets, and now it’s time to take stock and winterize the surplus.

After cataloging my inventory, I vacuum-sealed the packets to store in the freezer until spring.

If you plan to freeze seed surplus, keep a few precautions in mind:

• Thaw before opening: Always let the sealed pouch reach room temperature before opening. Cold seeds attract ambient moisture, causing condensation that rots your seeds or ruins germination.
• Watch the pressure: Strong vacuum suction can crack or crush larger, brittle seeds like peas and beans.
• Keep it dry: Any trapped humidity inside packets will freeze into cell-damaging ice crystals.
